Growing near the ocean on a sacred mountain in Shandong, China, this Imperial Grade green tea is a daily ritual of grounding and connection.

It is incredibly sweet. nutty, rich and savory with lots of satisfying umami coming through, a long lasting mouthfeel and an invigorating cha qi (tea energy). Its dynamic properties are at once grounding and uplifting!

Grown and processed by a small family farm in Laoshan Village at an altitude of 300 meters, the tea is grown under cover of greenhouses to protect the leaves from the frost and also to the enhance the potency of the leaves by restricting photosynthesis. The result is a high level of L Theanine, an amino acid that enhances alpha waves in the brain and brings you into a calm, focused state of mind.

STEEPING:

Steep 1 teaspoon in 5 ounces of water that is about 5-10 minutes off of a boil (130- 175 degrees ) for a minute or less. Makes 4 infusions.

I also like to place a pinch of leaves directly in my tea bowl, add hot water and sip as the leaves steep.

Sometimes I eat the leaves when they are steeped or toss them into a salad (mache or tat soy work great!) and toss them in a miso sesame ginger dressing.
